- It's 80 g of jarred peppers finely chopped.
- Prepare 4 of spring onions chopped.
- You need 100 g of grated cheese (I used a mix of cheddar and Parmesan).
- Prepare 1 tbsp of fresh oregano chopped.
- Prepare 1 tsp of dried oregano.
- You need 225 g of self raising flour.
- You need 90 ml of vegetable oil.
- Prepare 2 of large eggs.
- It's of Milk (enough to top up the jug to 300ml - see instructions below).
- You need of Salt and pepper.

- Preheat the oven to 180 degrees. Peel and chop the sweet potato into small cubes, put on a roasting tray, coat in oil and season. Roast in the oven for 20 mins until soft. (Keep the oven on).
- Chop the spring onions, oregano peppers and roasted sweet potato. Add to a mixing bowl with the flour, grated cheese, the dried oregano and some seasoning..
- In a jug add 90ml vegetable oil, two eggs and enough milk to fill the jug up to 300ml. Whisk everything together..
- Pour the milk mixture into the vegetable mixture and combine to make a smooth paste..
- Line a muffin tray with 12 muffin cases and divide the mixture evenly between the cases..
- Place in the oven and cook for 20 minutes. Check they’re cooked by piercing with a knife or skewer. If it comes out clean, they’re ready..
