- Prepare 1 kg of pork lion roast joint.
- Prepare 1 of small yellow onion, peeled and sliced.
- You need 4 of shallots, peeled and quartered.

- You need 1 tbsp of olive oil.

- Put the onions in a roasting tray..
- Score the fat with a sharp knife at about 1cm apart and pat dry with some kitchen roll. Rub the skin with 1 tbsp of salt..
- Next cover with tin foil and leave at room temperature for about 30 minutes..
- Next heat the oven to 220c (fan assisted)..
