  2. Score the fat with a sharp knife at about 1cm apart and pat dry with some kitchen roll. Rub the skin with 1 tbsp of salt..
  3. Next cover with tin foil and leave at room temperature for about 30 minutes..
  4. Next heat the oven to 220c (fan assisted)..
