Ingredients of Vegan Shepherds Pie
- You need 1 of Onion, chopped.
- You need 2 cloves of Garlic, finely chopped.
- You need 200 g of Mushrooms, chopped.
- You need 3 of Carrots, chopped.
- Prepare 2 of large Celery sticks, chopped.
- Prepare 400 g of Vegan mince.
- You need of Shepherds pie spice mix.
- It's 1 cup of Peas (frozen or fresh).
- You need 4 of medium/ 3 large Potatoes, diced.
- Prepare 1 cup of Dairy free milk (oat).
- Prepare 1 of Bread crust.
- You need 2 cloves of Garlic, finely chopped.
- It's 1 tsp of Oil.
- Prepare 2 tbsp of yeast flakes.
Vegan Shepherds Pie instructions
- Fry the onions, garlic, mushrooms, celery, carrots and vegan mince in a large oiled pan for 20 mins on medium heat..
- Meanwhile, boil the potatoes until soft (~15 mins).
- In a small pan, boil the peas for 3 mins in 300ml of water then stir in the shepherds pie spice mix and boil for a further 3 mins. Keep stirring as the gravy will thicken.
- Stir the peas/gravy mix into the frying pan mixture and remove from the heat. Pour in the final mixture into a large Pyrex dish.
- Drain the potatoes and mash until smooth. Add the oat milk and stir. Spoon the potato mixture into the Pyrex dish and smooth over with the back of the spoon.
- Add the bread crust, tsp of oil and garlic to a food processor and blend (or cut bread with scissors). Sprinkle the crumbs and yeast flakes over the potato in the pyrex dish.
- Put the dish (without a lid) in the oven for 20 mins at 180°C until browned on top. And enjoy!.
