- You need of Large bag of prepared Mediterranean veg ready to roast (chunky cut red onion, courgette, squash, bell peppers, tomatoes, garlic etc).

Roast Mediterranean Veg & chickpea stew instructions
- Place veg in ovenproof dish with olive oil and sprinkle with thyme and oregano.
- Cook according to instructions on packet, roughly 30 - 40 mins stirring Halfway through.
