- Prepare 1 of Small Joint Topside Beef.
- It's of Pepper mix......
- It's 1 tsp of Red crushed peppers.
- It's 1/2 tsp of Cracked black peppercorns.
- You need 1 tsp of Hot Pepper Sauce.
- It's 1 tsp of Oil.

- Add the beef to a preheated oven 160°C for 35 minutes. In a snug roating dish wit parchment paper right up the sides..
- Next add the pepper mix in a tub or small bowl add the oil, then black pepper, red pepper and the hot sauce mix well then add a little salt (optional).
- Take the meat out the oven and holding the meat drain off the juices in a jug later to make your gravy or just add the beef stock to the fridge for another time..
- Using a baking brush add the pepper mix all around the outside of the beef if it is tied with string just keep it on and go over it..
- Cover with foil and cook on low for 25 minutes. After that time take off the foil and cook for a further 5 minutes on 180°C..
- Take out let stand for an hour before Slicing..
- Serve with a roast dinner. Or sliced to go with salad or some veg..
